Vacuum Infusions
For hard extrusions and high liquid percentages, vacuum infusion ensures deep and even coating. The process removes air from extrusions, applies the liquid, then uses atmospheric pressure to push the liquid inside.
Rule of thumb: if your product is too wet to package directly, use vacuum infusion.
Powders can be blended into liquids or added directly. A&J has developed systems to achieve even powder coatings on wet products.
Best practices include weighing all ingredients, including liquids. The savings in liquid usage alone often justify the investment.
